CHOC MINT AFTER DINNER BALLS

These after-dinner choc mint balls are the perfect after-you-eat healthy treat to satisfy the sweet palate. They have a lovely peppermint flavour as well as a delightful little crunch from the cacao nibs and are ideal eaten straight from the fridge. Guilt-free indulgence in a matter of minutes.
- Cook: 5 mins
- Yields: Approx. 20 balls (15g each)
1Blitz the almonds in a food processor on full speed until a flour forms.
2Add the dates (pitting before adding), cacao powder, coconut oil and peppermint oil. Blend again until a sticky nutty dough forms.
3Add cacao nibs and pulse a few times. Roll the mixture into 15g mini balls and place in fridge. Store in fridge for up to 2 weeks.
